Fried Chive Omelette
Chives are rich in protein, sugar, calcium, iron, and phosphorus. Eating chives regularly is good for the liver. Ingredients
– Chives: 1 stalk
– Eggs: 4 eggs
– Salt: 1 teaspoon
– Cooking oil
Instructions
– Remove the roots of the chives, wash them, drain the water, and then cut them into small pieces. Add a little salt to the chives and let them sit for 15 minutes. Then squeeze the chives to extract the water and set them aside.
– Break the eggs into a bowl, add a teaspoon of water and whisk to make the eggs softer when fried.
– Next, mix the chives and eggs together, add a pinch of salt and mix well.
– Heat a little cooking oil in a pan, then pour the egg mixture into the pan and fry over low heat. Fry until the bottom of the eggs is set, then flip the eggs. Fry until the bottom is almost cooked, then use a spatula to break the eggs slightly and turn off the heat.

Sauteed Onion Omelette
Ingredients
– Onions: 2 bulbs
– Eggs: 3 eggs
– Chili pepper: 1 pepper
– Salt
– Sesame oil
Instructions
– Peel the onions and cut the washed onions into thin slices.
– Soak the onions in water and then separate them into long pieces to avoid eye irritation.
– Next, break 3 eggs into a bowl, add a little salt to enhance the flavor, and add a few drops of white vinegar to eliminate the fishy smell and enhance the fragrance. Beat the mixture with chopsticks until well combined. Rinse the chili pepper, remove the seeds, and cut into small pieces.
– Heat oil in a pan, pour the egg mixture into the pan after the oil is hot, and use a spoon or chopsticks to separate the eggs into small portions. Transfer the eggs to a plate.
– Pour oil into the pan, add the onions and green chili peppers, and stir-fry. The onions will become more fragrant when fried over high heat.
– Stir-fry for about 1-2 minutes over high heat until the onions slightly change color. Add a pinch of salt and a tablespoon of sesame oil for seasoning.
– Then, add the fried eggs to the pan and stir-fry with the onions for a while, then turn off the heat.
