Member M.V on a culinary forum has shared a secret with sisters to make crispy roasted pork. With 8 years of experience in making this dish, M.V account affirms that with the following recipe, sisters just need to follow along and success is guaranteed.

Marinate the sauce into the meat, and rub the skin with salt and lime.

Ingredients:

– 1 kg pork belly; lime, rock salt or table salt

– Sauce to marinate the meat: 2 tablespoons minced garlic, 2 tablespoons minced shallots, 1 tablespoon olive oil, 1/2 teaspoon salt (or 1 teaspoon soup powder), 1/2 teaspoon pepper, 1/2 teaspoon chicken stock powder, 1/2 small pack of five-spice powder. Peel the garlic and shallots, then put them together with the spices into a blender and blend until smooth.

Step 1: Wash the meat thoroughly and let it dry. Pat the meat with a paper towel to make it completely dry. Place the meat with the meat side up, then spread the sauce over the entire surface of the meat, including the edges. Absolutely avoid getting the sauce on the skin.

Step 2: Flip the meat so that the skin is facing up. Use a paper towel to wipe the skin clean. Rub salt thoroughly on the surface of the skin to let it absorb the salt, then wipe off any excess salt on top. Let it sit for 20 minutes for the salt to penetrate the skin (you can use a sharp object to prick the skin for better penetration).

Step 3: After the salt has been absorbed, continue to rub half a lime over the skin to let it absorb the lime. Let it sit for another 20 minutes.

Note that the skin must be completely dry when roasting, as wet skin will not become crispy.

Step 4: Put the meat in the refrigerator overnight, or if marinating in the morning, take it out in the afternoon to roast. When putting it in the refrigerator, make sure the meat is not covered so that the skin can dry.

Step 5: Roast the meat using an air fryer. Choose a temperature of 170 degrees and preheat the air fryer for 10 minutes. Take the meat out of the refrigerator and place it directly into the air fryer. Make sure the skin is facing up and pressed against the hot heat. Roast the meat for 1 hour or until the skin is crackled, golden, and cooked.
