It wouldn’t be an exaggeration to say that pork shoulder is the most delicious meat, second only to spare ribs because it is not fatty, the small pieces are soft and sweet. This is a simple ingredient, easy to eat and easy to cook, so it often appears on the tables of Vietnamese families.

With this ingredient, you can make many delicious dishes such as deep-fried pork shoulder, sweet and sour pork shoulder stir-fry, braised pork shoulder in fish sauce, pork shoulder rolls with vegetables… For busy people who don’t have much time to cook, you can also show off your skills by making pork stir-fried with mushrooms according to this recipe.

1. Ingredients for pork stir-fried with mushrooms

– Dried mushrooms: 10 pieces

– Pork shoulder: 100 grams

– Carrot: ½

– Green bell pepper: 2

– Spring onion, ginger

– Seasonings: Oyster sauce, cooking wine, cooking oil, salt, soy sauce, sugar

2. How to make pork stir-fried with mushrooms

Step 1: Prepare the ingredients

– After buying the pork shoulder, it will be washed and cut into bite-sized pieces.

– Put the dried mushrooms in a small bowl and soak them in water until soft. Then, rinse with clean water and slice thinly.

– Peel the carrot, wash it clean and slice it.

– Remove the stem of the bell pepper, discard the seeds and cut into bite-sized pieces.

– Peel the ginger, wash it again and finely chop it.

– Remove any wilted or discolored leaves of the spring onion, wash and cut into small sections.

Step 2: Marinate the pork shoulder

– Put the thinly sliced pork shoulder in a small bowl, then add a pinch of salt and 1 teaspoon of cooking wine.

– Use chopsticks or a spoon to mix well and marinate for about 5 minutes to let the meat absorb the seasoning.

Step 3: Stir-fry the pork shoulder with mushrooms

– Heat a pan, add 1 tablespoon of cooking oil and heat it up. Then, quickly stir-fry the thinly sliced pork shoulder until the meat changes color, then add the finely chopped ginger, sliced spring onion and continue stir-frying.

– Wait until you smell the fragrant aroma, then add the soaked mushrooms and season with seasonings such as soy sauce, oyster sauce… and stir-fry over low heat for about 2 minutes.

– Next, add the prepared carrot and bell pepper to stir-fry for 2 minutes, then season with sugar and salt to taste, and turn off the heat.

The pork stir-fried with mushrooms after being cooked will have an eye-catching color with orange from the carrot, green from the bell pepper, and black-brown from the mushrooms. When eating, you will feel the refreshing aroma of mushrooms combined with the delicious and fragrant meat, and the spicy taste of bell pepper. The dish is best enjoyed with white rice, especially on chilly days.
