Braised Sea Fish with Green Bananas

Ingredients

For this recipe, you’ll need about 500g of sea fish such as mackerel, tuna, or scad.

Green Bananas: 3-4, choose slightly mature bananas that are not too ripe.

Seasonings: Fish sauce, sugar, coloring agent, pepper, garlic, shallots, ginger, and chili.

Cooking oil, coconut water (or boiled water).

Preparation

Step 1: Clean and Cut the Fish

Rinse the fish with diluted salt water or rice washing water to remove any fishy smell, then pat it dry.

Cut the fish into bite-sized pieces.

Step 2: Prepare the Green Bananas

Peel the bananas and cut them into similar-sized pieces as the fish, or quarter them lengthwise.

Soak the bananas in diluted salt water or vinegar-infused water to prevent discoloration.

Step 3: Marinate the Fish

In a bowl, mix the fish with fish sauce, sugar, pepper, chopped shallots, and ginger. Let the fish absorb the flavors for 20-30 minutes.

Step 4: Braise the Fish with Bananas

In a pan, sauté garlic and shallots in hot oil. Add the marinated fish and briefly sear it.

Arrange the bananas in a pot, place the fish on top, and add a few slices of ginger and chili. Pour in coconut water (or boiled water) until it barely covers the fish. Bring it to a boil over high heat.

Reduce the heat and simmer gently for 30-40 minutes. Occasionally turn the fish over to ensure even cooking and absorption of flavors.

As the liquid reduces, taste and adjust the seasoning if needed. Sprinkle some ground pepper for an extra kick.
