According to Ms. My, the family’s rice dish in the Chinese dialect is called “chung phan”, chung means bowl, and phan means rice. The cooking method has remained unchanged for over 7 decades. Rice is put into each rice bowl, then added with water, and steamed in a steamer using steam. Each steamer can hold about 80 rice bowls and takes about 30 minutes to cook the rice, producing smoke and a fragrant aroma. “Cooking rice in clay pots results in soft, tender, and delicious rice, which retains its heat longer when eaten,” added Ms. My.
