But if you shell the peas and put them straight into the freezer, they will become wrinkled and lose their juiciness after a few days.

To freeze fresh green peas without losing their juiciness and plumpness, follow these tips:

Step 1: Select the peas:

You need to pay attention to choose fresh and delicious peas. You should choose fresh green peas because they usually contain more nutrients than dried or frozen peas. Look for young peas with vibrant, green, unblemished shells. The stem should be fresh and green, and the shell should be covered in fine hairs.

Make sure to observe that the shell is glossy and crisp, without any dents or roughness. Avoid buying peas that feel bumpy when touched, as they will not taste good and the peas will not be sweet.

Step 2: Shell the peas

If you plan to store the peas for about a week, leave them in their shells and put them in a sealed plastic bag or ziplock bag to keep them cool. If you want to store them longer, shell the peas.

Then, rinse the peas thoroughly.

Boil a pot of water and add a pinch of salt. Then, add the peas and cook for about 2 minutes. When the peas float to the surface, remove them and immediately transfer them to a bowl of cold water and soak for 2 minutes, then take them out.

Step 3: Store the peas

After removing the peas, use a paper towel to dry them, then transfer them to a glass container, specialized plastic bag, seal it tightly, and place it in the freezer.

Pay attention to the blanching time in boiling water, which should be equal to the soaking time in cold water. When storing, divide the peas into small bags so that each time you want to eat, you can take out one bag to avoid thawing and refreezing.
