Choosing fresh and good eggs

To determine if an egg is fresh or not, you should look at the shell. A thick and medium-sized shell indicates that the egg is fresh. You should avoid choosing eggs with thin and large shells. Do not buy eggs with very smooth and shiny shells or with cracks on the surface, as they are likely to be old eggs. Fresh eggs have slightly rough shells and a thin layer of white powder.

When buying eggs, you can hold the egg in your hand and shake it gently. If there is no movement inside, the yolk and white are still dense and it is a fresh egg. If there is movement inside, it means the egg has been stored for a long time.

Preserving eggs with bran or sawdust

Preserving eggs with bran or sawdust is a method that has been used by people for a long time. You need to prepare a clean container, some bran or sawdust. Spread a layer of bran/sawdust at the bottom of the container and then stack the eggs on top. For each layer of eggs, sprinkle another layer of bran/sawdust. Repeat this process until finished. Cover the container tightly and store it in a dry and cool place. With this method, eggs can stay fresh for several months. Note that when stacking eggs, you should place the larger end of the egg facing upwards and the smaller end facing downwards to prevent the egg yolk from sticking to the shell. Do not stack eggs upside down or horizontally.

Check the egg container once a month.

Preserving eggs with tea residue

If you often drink dried tea leaves, keep the tea residue and dry it thoroughly. When you have enough tea residue, you can use it to preserve eggs. The process is similar to preserving eggs with bran/sawdust as mentioned above.

Preserving eggs with beans

You can put eggs in a container with soybeans, green beans, or black beans. Dry beans can help keep the eggs fresh for a longer period of time, without the risk of spoilage.

Preserving eggs with rice

Similar to beans, you can use rice to preserve eggs. The rice powder can cover the small holes on the egg surface, preventing air from entering inside and helping the eggs stay fresh for a longer time.

Preserving eggs with vegetable oil

You can use a clean paper towel to wipe the eggs and then apply a thin layer of vegetable oil on the surface. Store the eggs in a dry and cool place. With this method, you can keep the eggs fresh for more than a month.
