The Silver Herring: A Delicate Delicacy of the Hong River
The Silver Herring, a sea and brackish water fish, undertakes an annual migration up the Hong River to spawn. This unique journey gives rise to a delicacy, with the best-tasting herrings found in this famous river.
These herrings are slightly larger than minnows, with a silvery-white body and a distinctive long flag on their dorsal fin. They are easily recognizable and much sought-after by gourmands. The fish has a thick body with plenty of sweet, fragrant flesh and small bones; its eggs are considered a delicacy.
Ms. Minh Chau, a 29-year-old resident of Hung Yen, shares that the Silver Herring usually appears in the Hong River around February and March of the lunar calendar. This is when riverine folk begin their fishing expeditions.
“My parents are original Hong River fishermen. Growing up, I knew there was only one season for Silver Herrings – spring. These fish typically dwell in the sea and only after Tet, they swim upstream to reproduce.”
Chau reminisces, “In the past, Silver Herrings were abundant. I remember each season, my parents and neighbors would catch tons of fish to sell to traders. My mother always kept some to braise with hot rice, creating an unforgettable culinary experience.”
According to Ms. Chau, natives of Hung Yen, regardless of where they reside, return home during this season to indulge in the Silver Herring’s delights. They yearn for the flavors of their childhood and the rustic charm of this familiar fish.
During the season, fresh Silver Herrings flood the markets. As these fish don’t live long after being caught, buyers must be discerning. Chau advises checking for clear eyes and a firm body to ensure the fish’s freshness. “Silver Herrings from my hometown are quite affordable, costing only 50,000-60,000 VND/kg. In cities, the price is slightly higher, around 80,000 VND/kg for vacuum-packed fish,” she shares.
Preparing Silver Herrings is straightforward, allowing home cooks to be creative with dishes like frying, mincing, braising, or grilling. Women can choose the cooking method that best suits their family’s tastes and preferences.
“The Silver Herrings of Hung Yen are always plump and full of eggs. When savored, one can appreciate their delectable, rich flavor. It’s an experience that’s hard to forget,” shared a local woman, capturing the essence of this unique delicacy.
