Stewed Eel with Banana and Soybean

Ingredients

– Freshwater eel: 2 small ones, cleaned and bone removed

– Minced crispy pork meat: 80g, mixed with a little cornstarch, seasoning powder, and finely chopped lolot leaves. Wrap the mixture in lolot leaves and deep-fry.

– Pork belly: 1 piece, grilled until the edges are charred

– Soybean: 1 sheet, cut into small pieces and deep-fried until golden

– Green banana peppers: a few, peeled, sliced, and lightly boiled

– Tomatoes: 2 ripe ones, peeled and seeded

– Seasonings, brew, apple vinegar, herbs: scallions, perilla leaves, basil, lolot leaves, crushed garlic

How to cook stewed eel with banana and soybean

– Cut the eel into small sections, put the pork roll in between, and roll it up. Tie it with a string, put a little cooking oil in a pan, and press the roll until golden.

– Stir-fry tomatoes + soybean + banana, then add pork belly and eel, stir-fry until fragrant. Add fish sauce and filtered brew water, simmer until the tomatoes are soft.

– Add water and bring it to a boil, then cover the pot with a small fire for 20-30 minutes. Season to taste, add 1 tablespoon of apple vinegar or rice wine for a flavorful aroma. Finally, add various herbs and crushed garlic.

Put the stewed eel with banana and soybean in a bowl, eat it hot with vermicelli and fresh herbs.

Steamed Fish

Ingredients

– Indian mackerel: 1 fish weighing about 750g or the type of fish you like

– Chili peppers: 4

– Scallion leaves: 40g

– Ginger: 10g

– Cooking wine: 1 tablespoon

– Steamed fish sauce: 30ml

How to make steamed fish

– Gut and clean the fish, rinse with water, then pat dry with paper towels. Next, add scallion leaves cut into sections, 4 slices of ginger, and 1 tablespoon of cooking wine to the fish bowl.

– Massage the fish with your hands and marinate for 10 minutes.

– Cut off the head and tail of the fish, remove the bones in the middle, and use a knife to cut strips on both sides of the fish.

– Place the fish on a deep plate, twist these fish meat strips at a 90-degree angle.

– Arrange the head and tail of the fish into a whole fish shape, then steam it. When the water in the pot boils, reduce the heat to medium and steam the fish for another 8 minutes.

– Then add chili slices on the fish strips for decoration.

– Sprinkle chopped scallions on top, drizzle the steamed fish sauce.

– Heat 2 tablespoons of cooking oil until very hot, then evenly pour it on everything to create a fragrant aroma.

Grilled Spare Ribs

Ingredients

– Whole rack of ribs

– Lemons

– Thyme

– Barbecue marinade

– Garlic, chili peppers

– Potatoes, carrots

– Vegan butter

– Seasonings: fish sauce, seasoning powder, pepper, chili powder, chili sauce, white sesame, honey

How to make grilled spare ribs

– Rinse the ribs. Boil a pot of water, add ginger and salt, blanch the ribs briefly to remove impurities. Drain well, marinate with barbecue marinade, honey, chili sauce, seasoning powder, fish sauce, chili powder, pepper, and crushed garlic. Wrap it and refrigerate overnight or at least 3-4 hours for the ribs to absorb the flavors.

– Place the ribs in an oil-free frying pan, grill at 160°C for 20-30 minutes. Add a few slices of lemon and thyme on top of the ribs. Cut the garlic in half and place it on the baking tray, then roast at 190-200°C until the ribs are golden.

– Saute crushed garlic with vegan butter, then mix the butter evenly with potatoes and carrots, adding a little pepper and salt to make the vegetables more flavorful. Arrange them on the baking tray and put them in the oil-free frying pan at 180°C. The potatoes take about 7-8 minutes to cook, while the carrots take about 15 minutes.

– Stir-fry crushed garlic until fragrant, then add the marinated rib sauce and boil it to create a dipping sauce, adding a little roasted white sesame.

Place the grilled spare ribs on a plate with carrots, potatoes, and roasted garlic, along with a bowl of marinade sauce for dipping the ribs. This dish is delicious and fragrant, and everyone will surely love it.
