Soup Ingredients
– 50g boneless chicken meat
– 1.5 corn cobs
– 1.2 liters of corn and water mixture
– 50g seafood mushrooms (can be replaced with enoki mushrooms)
– 40g carrots
– 30g bamboo shoots
– 10g minced onion
– 6 roots of cilantro
– Egg whites
– Seasonings: 8ml fish sauce, 2g seasoning powder, 2g coarse salt, 15g oyster sauce, 15g sesame oil, 27g cornstarch, 27g cornmeal, pepper, herbs according to preference.
Soup Instructions
– Peel 1 corn cob and grind the seeds with 1.1 liters of water. Strain the mixture to get 1 liter of corn water. Thinly slice the remaining half of the corn cob for cooking the soup and keep the core.
– Dice the carrots, seafood mushrooms, and bamboo shoots.
– Heat a pan, sauté the minced onion with cooking oil. Add carrots, corn, bamboo shoots, and mushrooms and stir-fry quickly. Add 15g of oyster sauce and turn off the heat.
– Bring the 1 liter of corn water to a boil, add the corn core. Skim off any foam while boiling.
– Remove the corn core and season the soup with remaining seasonings such as fish sauce, seasoning powder, cilantro roots. Then add 50g of chicken meat to the boiling water, cook for 3 minutes, then remove and let it cool. Shred the chicken meat into thin strips. Next, add the stir-fried vegetable mixture to the broth and cook for an additional 2 minutes.
– Dissolve cornstarch and cornmeal with 20ml of water, and slowly pour the mixture into the pot while stirring gently in the same direction. Be sure to add the cornstarch gradually to avoid clumping. Then add the shredded chicken meat.
– Pass the egg whites through a sieve and wait for the soup to boil again, then turn off the heat. Ladle the soup into a bowl and garnish with pepper, cilantro, and enjoy.
The topping vegetables can be replaced with seafood, minced meats like beef or pork. The accompanying vegetables for the soup can also be varied.
Tips for Choosing Fresh and Delicious Chicken
– If buying pre-cooked chicken, choose free-range chicken with light yellow skin and firm meat. When touching the chicken, it should have good elasticity.
– Avoid buying chicken with a foul smell, watery discharge, or when touched, the meat feels soggy without elasticity.
– If buying live chicken, choose ones with smooth feathers, bright red combs, press the chicken breast area lightly and it should feel full and have good elasticity. Avoid choosing chickens with purple combs, dripping watery discharge, or dull feathers.
