Cookies are a beloved treat enjoyed by many. Making them at home allows you to customize the flavors and add different ingredients to your liking. Additionally, homemade cookies help you avoid adding preservatives or artificial additives.
Furthermore, some people hesitate to make these intricate treats because they believe that they need an oven, a mixer, and other equipment to create the perfect cookie. However, it is not necessary to have all those things; you can make them by hand with the simplest tools in your kitchen.
Preparing the ingredients:
The cookie dough includes:
150g all-purpose flour
80g unsalted butter
30g egg yolks (about 2 eggs)
70g granulated sugar
If you like the flavors of cocoa or matcha green tea, you can add 7g of matcha or 7g of cocoa. Some people like their cookies fluffy, so they add baking soda and baking powder. However, if you prefer not to use these leavening agents, the cookies will still turn out crispy.
The cream filling ingredients:
50g butter
25g shortening
70g granulated sugar
Instructions for making the cookies:
Combine the flour, eggs, butter, and sugar. To make kneading easier, place the butter in a warm water bath to melt it. Once the dough is well-mixed and smooth, refrigerate it for about 15 minutes.
Shaping the cookies: There are two methods to shape the cookies. Method 1: Roll out the dough to the desired thickness and use a bottle cap or cookie cutter to cut them into squares or circles. Method 2: Divide the dough evenly by hand and flatten them into desired shapes.
Once the cookies are shaped, place them on parchment paper and poke holes all around them. These holes prevent the cookies from puffing up during baking. Preheat a pan and place the cookies on it. The butter will melt due to the heat, but it will dry and become crispy as the cookies cook. Once the cookies are hot, lower the heat to allow them to become crispy without burning on the outside. You can flip the cookies and move them around for even cooking and to ensure they are dried and crisp.
Instructions for making the cream filling:
Melt the butter and then mix it with the shortening, sugar, and vanilla extract. If you have a mixer, it will make the process quicker and easier. If not, you can hold the mixing bowl firmly and use a spoon or spatula to mix the ingredients well.
Once the cookies have cooled, you can put the cream filling into a piping bag and squeeze it onto one cookie, then place another cookie on top. If you prefer more cream, you can increase the amount of filling.
