Pork Blood with Mustard Greens

Pork Blood Preparation

If you buy liquid pork blood, mix it with clean water in a ratio of 1:1.5. Then, gently stir with a spoon.

Once the pork blood mixture is well dissolved, let it sit for about 10 minutes until the blood solidifies. At this point, you can easily cut the blood into bite-sized pieces.

Preparation of Other Ingredients

After purchasing mustard greens, remove any damaged or wilted leaves, wash them with water, and let them drain.

Then, cut the mustard greens into small pieces.

Cooking the Soup

Take a pot, add water, and bring it to a boil. Once boiling, add the pork blood and cook until the water boils again. Use a ladle to skim off any foam from the pot. Check if the pork blood is fully cooked. Depending on your taste preferences, you can season it to taste!

Next, add the mustard greens to the pot and wait for the water to reach a boil again. Then, you can turn off the heat.

Pork Intestine Stir-fried with River Hemp Leaves

Ingredients: Pork Intestine, River Hemp Leaves, Chives, Dried Shallots, Cooking Oil, Seasonings

Method: Cut the frozen pork intestine into palm-sized pieces. Boil 1 liter of water and cook the pork intestine until fully cooked. Thinly slice the dried shallots. Wash and finely chop the chives.

Finely chop the river hemp leaves. Heat oil in a frying pan, add dried shallots and sauté until fragrant, then add the river hemp leaves. When the intestine boils, skim off any foam and add the sautéed river hemp leaves. Since the pork intestine is already seasoned, you don’t need to add salt or MSG to this dish.

Let it simmer for 10 minutes over low heat until the intestine is tender. Then, turn off the heat. Serve the Pork Intestine Stir-fried with River Hemp Leaves in a bowl and enjoy it while it’s still warm.

Spicy Pork Blood Soup

When the water boils, slowly add the pork blood to the pot. Cook over medium heat until the blood is fully cooked. Add a small amount of chopped herbs such as green onion, cilantro, and Vietnamese coriander, stir well, and then you can turn off the heat.

Ingredients: Cooked Pork Intestine, Scallions, Garlic, Chili, Lime, Fish Sauce

Method: Cut the cooked pork intestine into square pieces. Steam the intestine until cooked. Wash the scallions and chop them.

Preparing the Scallion Fat Sauce: Put the chopped scallions in a bowl, then add a little salt and sugar. Heat oil in a frying pan and wait for the oil to heat up, then sauté the minced garlic. Pour all the hot oil and garlic mixture into the prepared scallion bowl, mix evenly to cook the scallions.

Making the Fish Sauce: Crush the chili and garlic, then add lime juice, sugar, and water. Stir well until the sugar is dissolved. Finally, add fish sauce, taste and adjust the flavor as desired. Place the intestine in a bowl, pour the scallion fat sauce on top, and serve with the fish sauce.
