Step 1: Boil the chicken
First, you need to prepare 600g chicken thigh by blanching it in boiling water for 20 minutes, along with a lemongrass stalk and a ginger slice for added fragrance. If you already have cooked chicken, you can skip this step and simply shred the leftover chicken.
Step 2: Prepare the ingredients
While waiting for the chicken to cook, julienne the carrot and mango into small, thin pieces, then soak them in 2 bowls of water to make them crispier.
Crush 3-5 garlic cloves and a small chili pepper, and finely slice 50g dried shallots.
Prepare another bowl of salt water to soak a finely sliced onion, then refrigerate for 20 minutes. Soaking the onion in salt water helps reduce its pungent smell.
Step 3: Fry the onions
Heat oil in a pan, then add the sliced onions. Once the onions turn golden brown, remove them from the oil and place them on a paper towel to drain excess oil. This will help maintain their crispiness for longer.
Note: If you have pre-made fried onions, you can skip this step. Otherwise, be cautious as onions can easily burn. Use medium heat, add a small amount of onions first, stir for a bit, then lower the heat before adding more onions until finished.

Once the cooked chicken has cooled down and dried completely, start shredding the chicken
Place the chicken on top and the bones at the bottom, then slowly slide the knife between the bones to separate the meat. After shredding, cut the chicken into small pieces and place them in a bowl.
Step 5: Mix the chicken salad
First, prepare a sauce by mixing 2 tablespoons of fish sauce, 1/2 tablespoon of sugar, and the crushed garlic and chili pepper. Adjust the seasoning according to your taste. Then, add all the prepped vegetables and shredded chicken into a large bowl. Mix well, ensuring the ingredients are evenly coated with the sauce. And you’re done!
