Step 1: Boil the chicken

First, you need to prepare 600g chicken thigh by blanching it in boiling water for 20 minutes, along with a lemongrass stalk and a ginger slice for added fragrance. If you already have cooked chicken, you can skip this step and simply shred the leftover chicken.

Step 2: Prepare the ingredients

While waiting for the chicken to cook, julienne the carrot and mango into small, thin pieces, then soak them in 2 bowls of water to make them crispier.

Crush 3-5 garlic cloves and a small chili pepper, and finely slice 50g dried shallots.

Prepare another bowl of salt water to soak a finely sliced onion, then refrigerate for 20 minutes. Soaking the onion in salt water helps reduce its pungent smell.

Step 3: Fry the onions

First, prepare a sauce by mixing 2 tablespoons of fish sauce, 1/2 tablespoon of sugar, and the crushed garlic and chili pepper. Adjust the seasoning according to your taste.
