To make this dish tasty, remember the following steps and pay attention to the ingredients below:

Prepare the ingredients:

– 500gr pork belly, choose evenly sliced pieces for better presentation and a more tender and flavorful meat. When shopping, opt for short pieces of pork belly, as they will have more even layers of fat and lean meat, resulting in a tastier dish.

– 5 duck eggs (or substitute with chicken eggs or quail eggs, depending on your family’s preference)

– 3 teaspoons of sugar

– 1 teaspoon of ground black pepper

– 1 teaspoon of salt

– 1 tablespoon of fish sauce

– 2 dried shallots

– 2 spicy chili peppers (optional, according to taste)

Step 1: Preparing the ingredients (this step is crucial for tender meat)

– Rinse the pork belly thoroughly and cut it into square pieces about 5cm in size. You can rinse the pork with white wine and ginger.

– Rinse the dried shallots and chili peppers and finely chop them.

– Place the pork in a pot, add 1 teaspoon of salt, wait until the water boils for about 1 minute, then turn off the heat and remove the pork. This blanching step ensures that the meat is clean and enhances its appearance when cooking.
