Rice is a typical dish of Vietnam. Previously, rice was often cooked in bamboo tubes or steamed twice for a soft texture. The glutinous rice after cooking should be soft but not mushy. However, in some families, cooking or steaming rice in bamboo tubes or double steaming can sometimes be time-consuming. With a non-stick pot, you can quickly cook delicious rice for offering at the altar or for breakfast, weekend meals to change the menu for the family.

Prepare the ingredients:

Sticky rice 500g (depending on the number of family members)

Various types of beans to cook with: peeled green beans, black beans, peanuts, gac fruit, depending on your preference.

A pinch of salt, a little cooking oil/chicken fat, roasted sesame salt to serve

Preparation

Soak the green beans and black beans in water before cooking to soften the grains.

Green beans will cook at the same time as sticky rice, so if cooking sticky rice with green beans, just soak the beans for half an hour and then mix them evenly with the rice.

As for black beans, there are 2 methods: Soak them for 2 hours, then cook until they boil to soften the beans before mixing them with the rice. Another tip is to dry the soaked beans on a pan to make them more fragrant and soft.

Soak the peanuts for about 2 hours, then simmer them before cooking so that the peanuts are partially cooked. When cooked with sticky rice, the peanuts will be soft and the rice will be sticky. But if you cook them together immediately, the peanuts will not be soft enough to eat.

Choose sticky rice

For delicious sticky rice, you should use sticky rice with yellow flowers, uniform grains, and avoid broken grains. White sticky rice should not have black heads or oil odor. Milky white grains taste better than white sticky rice.

How to cook sticky rice with an electric rice cooker

The glutinous rice is washed clean like regular rice. When cooking sticky rice with an electric rice cooker, there is no need to soak the rice. Nowadays, sticky rice absorbs water more than in the past, so when cooking sticky rice with an electric rice cooker, not soaking the rice helps you to cook it easier.

Method 1: Cook with just enough water: After rinsing the sticky rice and preparing the other beans and peanuts according to the above preparation steps, mix them together. Add a bit of salt to reduce the rice’s astringency. Then pour the mixture into the rice cooker. Pour water until it reaches the rice’s surface. When the rice cooker switches to the warm mode, use chopsticks to stir it evenly. The reason is that with the added water, some grains on top will not have enough steam to cook, and if not stirred, these grains will become hard. While stirring, add a spoonful of cooking oil or chicken fat and stir together. After stirring, close the lid and let the rice continue to cook with steam. Be quick when doing this to retain the heat and avoid having to turn on the cook button again, as it may cause the rice to stick to the bottom of the pot. About 10 minutes later, open the lid to avoid having the steam on the lid drop back onto the rice, making it wet and mushy. Avoid leaving it too long, so the rice will not stick together when eaten.

Transfer the sticky rice to a plate for offering at the altar or eat it with roasted sesame salt, roasted peanuts, stewed meat and eggs…

Method 2: Cook with more water: With this method, you don’t need to measure the amount of water, just pour more water than usual. Put the sticky rice mixture and the beans into the rice cooker. Pour boiling water until the surface is submerged about 1 centimeter. When the rice cooker boils again for 1 minute, pour all the water out, then continue cooking until the rice cooker switches to the warm mode. Wait for 10 minutes, then open the lid and stir in a little cooking oil/chicken fat to make the sticky rice shiny. Close the lid for another 5 minutes before serving.

The sticky rice grains will be shiny and have a creamy texture thanks to the cooking oil/chicken fat.

If you have coconut water, replacing filtered water with coconut water will make the rice fragrant and creamy. When cooked, replace the cooking oil/chicken fat with a bit of coconut water.

Another secret to make the sticky rice delicious and the rice fragrant and sweet is to add a little sugar, just a small spoonful. This will not make the rice taste sweet, but it will help eliminate the rice’s bitterness.
