Ingredients needed: Fish, scallions, ginger, soy sauce, cooking oil, beer, star anise leaves.

Instructions:

Step 1: First, you need to clean the scales of the fish, remove the intestines and black organs inside the belly, then use a knife to make a few cuts on the fish to make the meat more delicious, then put it on a plate to drain the water.

Step 2: Prepare the ingredients including thinly sliced ginger and shredded ginger, cut scallions into small pieces, and cut star anise leaves into sections. Layer the scallions and shredded ginger on the bottom of the plate, place the star anise leaves on top, and then place the fish on top.

Add more chopped scallions and shredded ginger into the fish belly. At the same time, place the sliced ginger on the cuts on the fish, add a moderate amount of beer to the pot and start steaming the fish.

Step 3: Steam the fish over high heat for about 3 minutes, remove all the scallions and shredded ginger from the bottom of the plate onto the surface of the fish. Continue steaming for about 4 minutes, then add a little soy sauce, cooking oil, reduce the heat and continue steaming until cooked, add some cilantro and enjoy.

Tips for steaming fish:

The first step in steaming fish is not marinating it. If you add salt to marinate the fish, it will cause the fish to lose a lot of moisture, the meat will not be firm, and it will have a strong fishy smell. Usually, after steaming the fish, just pour a suitable amount of soy sauce and cooking oil on top to stimulate the flavor of the steamed fish.

When steaming fish, you should use a lot of scallions and shredded ginger, as these spices can remove the fishy smell and enhance the aroma of the fish, making it more delicious.
