Quick Tip to Eliminate Stomach Odor
Preparing pig stomach requires careful handling to remove the odor. You can try the following methods:
Using flour and lime
For a normal pig stomach, you need about 4 tablespoons of flour and a fresh lime weighing about 70 – 80 grams.
First, you turn the inside part of the stomach out, revealing the yellow mucous. Add sliced lime and flour, massage to evenly coat the mucous, press firmly to crush the lime and eliminate the odor. Then, you will see the flour sticking to the mucous. You just need to gently push the flour with your hand, removing all the mucous from the stomach.
After removing all the mucous together with the flour, rinse it with water and a little salt. The stomach odor will be completely gone.
Using vinegar and salt
Salt and vinegar are effective cleaning and odor-reducing ingredients. First, turn the inside part of the stomach out and add 3 tablespoons of salt and 1/2 cup of vinegar (you can use various types of vinegar including rice vinegar or apple vinegar).
Massage quickly with your hands to let the salt rub into the mucous. After about 3 minutes, you will see the mucous slowly flowing away with the rubbing motion.
Finally, rinse the stomach thoroughly with water.
Blanching with hot water
Boil water in a pot, add some salt and a few slices of fresh ginger, turn up the heat until the water boils and quickly blanch the stomach. After removing it, use a knife to gently scrape off the coagulated mucous, then rinse it clean.
Using fish sauce
Squeezing the stomach with fish sauce can also help you eliminate the odor and remove the mucus on the pig stomach. With this method, you will save time and achieve excellent cleaning results, especially when eating, you will find it very delicious.
Note that you should use concentrated fish sauce because it is saltier and more effective for cleaning. Since the fish sauce has a strong smell, when squeezing the stomach with fish sauce, you should wear gloves and handle it gently to avoid splashing onto your clothes.
How to Boil Pig Stomach to Make it White and Crispy
After applying the above tips to eliminate stomach odor, you boil water in a pot, wait for the water to boil, then add the stomach and blanch for about 1-2 minutes, then remove it. You will see that the stomach becomes very white.
Then, use a knife to scrape off the fat attached to the stomach, scrape off the outer layer and rinse again with clean water.
Boil water in a pot, wait for it to warm up, then squeeze the juice of half a lime into the pot, add lemongrass, ginger, and then put the stomach in to cook. In the first 5 minutes after boiling, you open the lid to let the stomach odor dissipate, then cover it again and cook for about 15-20 minutes.
While waiting for the stomach to cook, prepare a bowl of clean filtered water, add ice, and squeeze the remaining lime juice into the bowl.
When the stomach is cooked, remove it and soak it immediately in the cold water bowl for about 15 minutes, or until ready to eat.
