1. Spicy-Garlic Fried Dried Anchovies
Ingredients:
- 300g dried anchovies
- Garlic, chili peppers, lime
- Fish sauce, sugar, cooking oil
- Toasted sesame seeds

Instructions:
Soak the dried anchovies in water for about 15 minutes to soften them, then rinse and drain. If you don’t like the heads, remove them and rinse again thoroughly, placing them in a colander to drain.
Peel and finely chop the garlic. Deseed the chili peppers and chop them finely.

Meanwhile, mix the fish sauce and sugar to create a sweet and savory sauce, adjusting the proportions to your taste. Heat 2 tablespoons of cooking oil in a pan and add the chopped garlic and chili, frying until fragrant.
Add the dried anchovies to the pan and stir-fry until they change color.

When the anchovies are golden, pour in the fish sauce and sugar mixture, stirring to coat them evenly. Continue cooking over low heat until the anchovies absorb the sauce. Finally, sprinkle with toasted sesame seeds and turn off the heat.
Just before serving, squeeze lime juice over the anchovies and mix well.
