Step 1 Prepare the Ingredients
Clean the squid by rinsing it under running water. Remove the beard, guts, and head. Take out the ink sac and internal organs. Soak the squid in diluted saltwater for about 10 minutes to reduce any fishy odor, then rinse and pat dry. Cut the squid into bite-sized pieces and make shallow diagonal cuts on the surface to create a diamond pattern. Mince the garlic, cut the onion into wedges, and finely chop the chili and scallions.
Step 2 Fry the Squid
Heat a pan of oil and deep-fry the squid pieces until they are cooked. Drain the excess oil and set aside.
Step 3 Make the Sauce
In a bowl, mix together 3 teaspoons of fish sauce, 3 teaspoons of sugar, 1 teaspoon of chili paste, and 1/2 teaspoon of five-spice powder.
Step 4 Cook the Squid in Sauce
