Here’s a delicious and soft-cooked seafood glass noodle stir-fry recipe that ensures each strand is perfectly separated and not sticky. Let’s get cooking!
Ingredients for 2 servings of seafood glass noodle stir-fry:
– 100g glass noodles (made from dong rice or green beans)
– 60g mushrooms of your choice
– 180g shrimp, peeled and deveined
– 120g cleaned and sliced squid
– ½ onion, sliced
– ¼ carrot, shredded
– 200g spoon vegetables (also known as Chinese cabbage)
– 10g minced garlic
– 2g salt
– Ground pepper to taste
Seasonings:
– 10ml soy sauce
– 20ml oyster sauce
– 60ml water
– 2g sugar
Instructions for cooking tender and tasty seafood glass noodle stir-fry:
Soak the glass noodles in warm water for about 10-15 minutes, then drain and set aside. If the noodles are too long, feel free to cut them in half.
While the noodles are soaking, prepare the other ingredients: Clean and slice the vegetables, squid, and shrimp. Season the shrimp and squid with a pinch of pepper and salt.
Combine all the seasonings in a small bowl and mix well (mixture A).
Heat some cooking oil in a pan over medium heat. When the pan is hot, add the mushrooms and cook for about 2-3 minutes on each side, or until they turn golden brown. Remove from the pan and set aside.
In the same pan, add the shrimp and cook until they are almost done. Remove from the pan and set aside. Do the same with the squid.
Add a little more oil to the pan if needed, then toss in the onions and cook for about 1-2 minutes. Next, add the carrots and continue cooking for another 2 minutes. Add the garlic and sauté until fragrant and golden.
Toss in the spoon vegetables and glass noodles, stirring quickly and evenly. Put the mushrooms back into the pan. Pour in ⅔ of mixture A and continue stir-frying for about 5-6 minutes, or until the vegetables and noodles are cooked to your desired doneness. If the dish looks dry and the noodles are still hard, gradually add 1-2 tablespoons of water and continue cooking.
Finally, add the shrimp and squid back into the pan and pour in the remaining mixture A. Stir-fry quickly to ensure all the ingredients are well combined and seasoned. Adjust the seasoning to your taste. Serve the seafood glass noodle stir-fry hot, garnished with ground pepper.
Pro tips:
This recipe works best with dong rice or green bean glass noodles. Avoid using Korean glass noodles as they are thicker and take longer to cook.
