Ingredients for Fried Shrimp
Fresh large shrimp: 500g (approximately 20-25 shrimp)
Panko breadcrumbs: 200g
All-purpose flour: 100g
Eggs: 2
Salt: 1/2 teaspoon
Pepper: 1/4 teaspoon
Minced garlic: 1 teaspoon
Optional shrimp marinade: 1 teaspoon each of garlic powder and chili powder
Oil for deep frying
Chili sauce or mayonnaise for dipping

Instructions
Step 1: Prepare the shrimp
Peel and devein the shrimp, leaving the tail on for presentation. Rinse the shrimp and pat them dry. Season with salt, pepper, minced garlic, and optional marinade for 15 minutes.
Step 2: Prepare the coating
Set up three bowls: one with all-purpose flour, one with beaten eggs and a pinch of salt, and the third with panko breadcrumbs. Ensure the breadcrumbs are dry and not clumpy for a crisp coating.
Step 3: Coat the shrimp
Dredge each shrimp in flour, shaking off any excess. Dip it in the egg mixture, ensuring it’s fully coated. Finally, roll it in the breadcrumbs, pressing gently to ensure an even coating. Repeat the egg and breadcrumb steps for a thicker crust.
Step 4: Fry the shrimp
Heat oil in a deep pan to 170-180°C. Carefully place 4-5 shrimp at a time into the hot oil to avoid crowding. Fry for 2-3 minutes until golden and crispy. Remove and drain on paper towels.
Step 5: Serve
Arrange the fried shrimp on a platter with lettuce garnish or a squeeze of lemon. Serve with chili sauce, mayonnaise, or tartar sauce on the side. Enjoy while hot and crispy!

Tips for the Best Fried Shrimp
Choose fresh, lively shrimp for the sweetest, firmest meat. Japanese panko breadcrumbs create an extra crispy coating. Avoid over frying to prevent tough shrimp and burnt breadcrumbs. For curled shrimp, make a few shallow slashes on the belly before marinating.
Good luck, and enjoy your delicious, crispy fried shrimp!
