1. Ingredients (serves 4)
– 400g pork shoulder meat (or pork belly)
– 1 bulb onion
– 1 bulb garlic
– 1 stalk lemongrass
– 3 tbsp caramel sauce
– 50ml fish sauce
– 3 tbsp dark soy sauce
– 2 tsp sesame oil
– 1 tsp ground pepper
– 2 tbsp sesame seeds
– Pinch of sugar and ground pepper, to taste
2. Preparation
Step 1: Prepare the ingredients
After purchasing the bamboo skewers, give them a quick rinse and boil in water to sterilize.
Rinse the pork and pat it dry. Then, cut the meat into thin, even slices.
Peel and wash the onion, garlic, and lemongrass. Finely chop them.
In a bowl, marinate the pork with fish sauce, caramel sauce, dark soy sauce, sugar, and sesame oil. Mix well.
Add the chopped onion, garlic, lemongrass, ground pepper, sesame oil, and sesame seeds (optional). Mix thoroughly and set aside to marinate for 2-3 hours.
Step 2: Skewering the meat
Thread the meat onto the bamboo skewers, ensuring the smaller pieces are tucked inside and the larger pieces are on the outside. Gently shape the meat into an even layer around the skewer.
Step 3: Grilling the pork
For the best flavor, grill the skewers over charcoal. Alternatively, you can use an oven set to 200°C for 30-35 minutes, turning the skewers occasionally to ensure even cooking.

The grilled pork skewers should have a golden glaze and an irresistible aroma. They are best enjoyed hot off the grill.
