A refreshing summer dish, this crispy seaweed salad is a delightful treat. The crunch of the seaweed, the sweetness of the shrimp, and the mild sourness of the dipping sauce create a wonderful combination of flavors.

Ingredients for Seaweed Salad
– For the best shrimp, look for those with shiny, natural-colored shells, free from any black spots or slime. Choose shrimp with heads firmly attached and clear joint connections.
– When buying pork ears, opt for those with a natural pinkish-white color and a shiny appearance. Good-quality pork ears should be bouncy when pressed and free from softness or liquid.
2How to Make Seaweed Salad
Step 1 Prepare the Ingredients
Rinse the seaweed with water twice to remove any salt. After rinsing, soak the seaweed in water until it softens and expands, then drain and set aside.

Clean and rinse the pork ears, and do the same for the shrimp. Finely chop the basil and mint leaves.
Peel and grate the carrot and cucumber into thin strips, then soak them in ice water for about 10 minutes to maintain their crispness. Drain and set aside.

Step 2 Boil the Pork Ears and Shrimp
In a pot, boil the cleaned pork ears for about 25 minutes until cooked. Remove and place them in an ice bath.
In the same pot of water, boil the shrimp for about 10 minutes until cooked. Drain and set aside to cool.
Once cool, peel and devein the shrimp. Cut the pork ears into bite-sized pieces.

Step 3 Make the Dressing
In a bowl, combine 120g sugar, 45ml lime juice, 25g chili sauce, 25g tomato sauce, 60ml fish sauce, and mix well. Finally, add 1 tablespoon of the chopped garlic and chili and stir to complete the dressing.

Step 4 Mix the Seaweed Salad
In a large bowl, combine the seaweed, carrot, cucumber, and dressing. Mix well. Then, add the shrimp, pork ears, basil, and mint and give it a final mix.

Serve the seaweed salad on a plate and sprinkle some roasted peanuts on top. It’s now ready to be enjoyed!
