Step 1 Prepare the Rambutan
Start by separating the rambutan into individual fruits and giving them a good rinse to remove any dirt or debris.
Next, peel the rambutan and carefully use a knife to remove the white flesh, discarding the seeds. Give the flesh a quick rinse and set it aside to drain.

Step 2 Make the Preserved Rambutan
In a pot, combine 700g of rock sugar, 1/2 teaspoon of salt, and 1.2 liters of filtered water. Stir well and place the pot on the stove over medium heat. Bring the mixture to a boil, stirring occasionally, until the sugar has completely dissolved.
