Step 1: Prepare the ingredients

Blanch the chicken feet in boiling water and soak them in salted water. Rinse again with clean water to remove any unpleasant odors and thoroughly clean the feet. Cut the feet into bite-sized pieces.

Crush and finely chop the garlic and shallots, keeping 3 shallots crushed but unchopped for boiling the feet. Divide the tamarind into two portions: squeeze one portion to extract the juice, and cut the other into rings, discarding the seeds to prevent bitterness. Remove the stems from the chilies, wash them, and slice them.

Peel and wash the young jackfruit, then cut it in half. Cut the lemongrass into sections, reserving 3 stalks to be crushed and used for boiling the chicken feet.

Step 2: Boil the chicken feet

Prepare a pot of boiling water and add the crushed lemongrass and shallots. Then, add the chicken feet and boil for 15 minutes.

Remove the feet from the pot and soak them in ice water for 10 minutes to tighten and crisp them. Drain the feet and set them aside.

Step 3: Make the Thai sauce

Heat a pan over medium heat and add 5 tablespoons of cooking oil. Once the oil is hot, add the chopped shallots and garlic, frying until golden. Reduce the heat to low and add 250 grams of sugar, 2 tablespoons of shrimp paste, 2 tablespoons of fish sauce, 1/2 tablespoon of chili flakes, 1 tablespoon of chili sauce, and 2 tablespoons of chili powder. Stir well to combine.

Pour in 180ml of water and simmer for 3 minutes until the sauce thickens. Remove from the heat and add the tamarind juice, allowing the sauce to cool.
