Tip:
– High-quality dried shrimp usually has a light pink or orange-pink color. Avoid those that are too red or too pale, as they may have been artificially colored or may not be fresh.
– Dried shrimp should have a natural, seafood-like aroma. Steer clear of any with an unusual pungent or chemical odor.

Step 1 Prepare the Ingredients

After purchasing the dried shrimp, soak them in water and rinse thoroughly. Once rinsed, squeeze the shrimp to remove excess moisture and let them air dry.

For the star fruit, slice it into thin, bite-sized pieces and rub with coarse salt to reduce its sourness. Rinse the fruit a few times after salting.

Crush and finely chop the shallots, and do the same with the spring onions and chilies.
