First, gently rinse the silken tofu under running water. Be careful not to break the tofu. Cut the tofu into bite-sized cubes.

Rinse the mushrooms and soak them in a diluted salt water solution for 5-10 minutes, then rinse again with warm water. Finely chop the mushrooms.

Similarly, rinse the scallions and garlic, then mince them.

For the pork, rinse it thoroughly and marinate it for 15-20 minutes with ½ teaspoon of seasoning powder and a small amount of minced scallions.

Heat a pan and add 1 tablespoon of cooking oil. Sauté the scallions and garlic until fragrant. Add the minced pork and cook until it changes color. Then, add the chopped mushrooms and season with 2 tablespoons of chili bean paste, 1 tablespoon of dark soy sauce, 1 tablespoon of light soy sauce, and chili oil to taste.

When the pork is almost cooked and has taken on the characteristic color of Mapo Tofu, add the tofu. Gently toss and stir-fry for 3-5 minutes to allow the tofu to absorb the flavors. Just before turning off the heat, add 1 tablespoon of sesame oil and serve. Garnish with chopped scallions for a more appealing presentation.

Tip: If you want a darker color for your Mapo Tofu, add a few drops of red food coloring or sesame oil.
