Traditional Meat Marinade
– 500g pork shoulder
– 1 clove garlic
– 3 stalks green onion
– 1 tablespoon honey
Seasonings: Broth mix, salt, sugar, fish sauce, oyster sauce, ground pepper, and cooking oil.

Step 1: Prepare the ingredients
Peel and crush the garlic, then finely chop it. Wash the green onions, cut off the roots, and chop the white parts finely. Slice the green parts into small pieces and set both aside separately. Rinse the pork shoulder with diluted salt water, then wash it again with clean water and pat it dry. Cut the meat into moderate-sized pieces and use a meat tenderizer to pound the meat to make it softer.
Step 2: Marinate the meat
In a bowl, mix 1 tablespoon each of broth mix, sugar, honey, fish sauce, oyster sauce, and cooking oil. Add 1 tablespoon of chopped green onion roots, 1 tablespoon of chopped garlic, and 1/2 tablespoon of ground pepper. Mix well and marinate the pork for about 2 hours to let the flavors absorb into the meat.
After the meat has absorbed the flavors, you can grill it on a charcoal grill or in an oven. This traditional pork shoulder marinade is perfect for grilled pork served with broken rice or rice vermicelli bowls.
Step 3: Grill the meat
As an alternative, you can use pork belly. Wash it with diluted salt water and then rinse it again with clean water. Pat it dry, cut it into moderate-sized pieces, and marinate it with 1 tablespoon each of broth mix, sugar, fish sauce, 1/2 tablespoon of salt, 1 tablespoon each of oyster sauce and cooking oil, 2 tablespoons of chili sauce, and 1/3 tablespoon of ground pepper. Mix well and marinate for 1 to 2 hours.
