300g pork belly

2. How to Cook Delicious Boiled Pork Belly
Step 1: Prepare the Meat
Thoroughly cleaning the meat is an extremely important step to enhance the flavor of the dish. After purchasing the pork belly, soak it in rice washing water (use the water from the second wash) for about 10-15 minutes, then scrape around the meat.
Once you’ve scraped off any dirt, rinse the meat again.

Step 2: Parboil the Meat

Fill a pot with enough water to submerge the meat. When the water boils, add about a teaspoon of salt and parboil the meat on both sides for around 3-5 minutes.
This step helps to tighten the meat and remove any impurities, resulting in a more aesthetically pleasing dish.
Just before turning off the heat, add a splash of vinegar to the pot to crisp up the meat. Then, remove the meat and plunge it into cold water.
Step 3: Boil the Meat

Boiling the Meat
After soaking the meat in cold water, place the pot back on the stove with enough water to cover the meat. Add a pinch of salt and the prepared onion, and boil the meat.
Adding onion during boiling helps eliminate any unpleasant odors from the meat while releasing natural sweetness, resulting in a more flavorful dish.
Boil each side of the meat for about 15 minutes. After boiling for a total of 30 minutes, use chopsticks to check if the meat is cooked. If the chopsticks can easily pierce through without any blood oozing out, the meat is ready.
At this point, add a splash of white wine to the pot and cook for an additional 2-3 minutes before turning off the heat.
3. Final Product

Crispy and Aromatic Pork Belly
Remove the meat from the pot and place it on a plate to cool down before cutting it into pieces and serving. You’ll notice that the meat is whiter and crispier than usual.
