- 150g crushed cashew nuts
- 200g winter melon preserves
- 100g lotus seeds
- 100g candied citron
- 50g roasted sesame seeds
- 50g candied ginger
- 100g pork floss
- 12 salted duck eggs
- 40g Mai Que Lo wine
- 40g sticky rice flour

– When choosing bird’s nest, opt for those with a white, yellow, or orange hue. The fibers should be intertwined like silk and have a seawater smell. To easily differentiate, soak the bird’s nest in water; high-quality bird’s nest will not change color and will retain its fiber shape.

2 How to Make Bird’s Nest Mooncake
Step 1 Prepare the Pastry Dough
First, combine 0.5 teaspoon of five-spice powder, 15g of peanut butter, 1.5g of baking soda with 390g of flour and mix well. Then, add 45g of cooking oil and 240g of sugar syrup, blending everything into a homogeneous mixture.
Note: Avoid over-kneading the dough as it may make the pastry tough.
After mixing, cover the dough with plastic wrap and let it rest for 40 minutes.

Step 2 Make the Bird’s Nest Filling
First, steam or stew 60g of bird’s nest with ginger for 10 minutes until the bird’s nest is cooked.
Next, use a little Mai Que Lo wine to brush onto 12 salted duck eggs to avoid any fishy smell, and then bake the eggs until they are cooked.
Mix the remaining ingredients: 150g crushed cashew nuts, 200g winter melon preserves, 100g melon seeds, 100g lotus seeds, 50g candied ginger, 100g candied citron, 50g roasted sesame seeds, and 100g pork floss. Then, add the cooked bird’s nest, 10g peanut butter, Mai Que Lo wine, and 40g sugar syrup, blending everything together.
Finally, gradually add the sticky rice flour and mix until the filling becomes sticky.

Step 4 Bake the Mooncakes
The mooncakes will be baked in three stages.
First bake: Place all the mooncakes in the oven at 190 degrees Celsius for 12 minutes. Then, remove them and brush the surface with water. Next, mix red yeast rice, a little egg white, unsweetened milk, and sesame oil, and brush this mixture onto the mooncakes to add color and moisture. Bake for the second time.
Second bake: Bake at the same temperature, 190 degrees Celsius, for 12 minutes. Then, brush with water and egg as before.
Third bake: Bake at 190 degrees Celsius for 7 minutes. After the three bakes, the mooncakes are fully cooked.
