Numerous recipes have been experimented with in the kitchen, but none have come close to this. The KFC chicken recipe is said to include a blend of 11 herbs and spices. The original Kentucky Fried Chicken recipe remains one of the world’s best-kept culinary secrets. This recipe is said to come from Colonel Harland Sanders’ nephew, Joe Ledington, from Kentucky. Ledington claims to have found it in a scrapbook belonging to his late aunt, Claudia, who was Sanders’ second wife. Ledington, 67, says he used to mix the spices for his uncle’s famous chicken, and this recipe is the real deal.
Several batches of chicken were prepared in a test kitchen by recipe tester and stylist Lisa Schumacher. Food & Dining journalists and editors tasted each batch, comparing it to an original bowl of KFC chicken to determine the accuracy of the recipe.

- Cooking time: 30 minutes
- Marinating time: 20-30 minutes
- Frying time: 15-18 minutes

Ingredients:
- 2 cups flour
- 2/3 tablespoon salt
- 1/2 tablespoon dried oregano
- 1/2 tablespoon dried thyme
- 1/3 tablespoon dried marjoram
- 1 tablespoon celery salt
- 1 tablespoon black pepper
- 1 tablespoon dry mustard
- 4 tablespoons paprika
- 2 tablespoons garlic salt
- 1 tablespoon ginger
- 3 tablespoons white pepper
- 1 cup low-fat cream
- 1 beaten egg
- 1 cut-up chicken; breast pieces should be halved crosswise for more even cooking
- Vegetable oil for frying

Instructions:
- Combine flour and all the spices in a large bowl.
- In a separate bowl, whisk together the egg and low-fat cream. Soak the chicken pieces in this mixture for 20-30 minutes at room temperature.
- Remove the chicken pieces from the egg mixture, letting the excess drip off. Then, dredge the chicken in the flour mixture, shaking off any excess. Let the coated chicken stand for 20 minutes.
- While the chicken is resting, heat about 7-8 cm of vegetable oil in a deep pot (or you can use a Dutch oven) to 175 degrees C (347 degrees F). Use a cooking thermometer to monitor the temperature. Once the oil reaches the desired temperature, reduce the heat to medium and start frying. Fry 3-4 pieces of chicken at a time until they develop a golden-brown crust, about 15-18 minutes, turning the pieces only once. Remove the cooked chicken from the pot and drain on a paper-towel-lined plate.
