Ingredients:
– 250g high-gluten flour
– 200g clean water
– 330g red dragon fruit juice
– 2g salt
– 13g sweet potato flour
– Coriander
Instructions:
Mix salt and sweet potato flour into the high-gluten flour. Add clean water and red dragon fruit juice, stir continuously until the mixture is smooth and has a beautiful pink color.
Brush a little oil on the round mold, pour in 1 spoonful of the batter, spread evenly, without air bubbles, steam for 1-2 minutes until the batter becomes transparent.
Take out the mold and place it in a bowl of cold water to cool down and make it easier to remove.
Use your hand or a bamboo stick to remove the batter and spread it on a cutting board. Use a small flower-shaped mold to press into the jelly.
Stack the petals on top of each other as shown in the picture, fold the bottom edge of the jelly over, and roll it into a round shape.
Make the second layer in the same way, put a small flower in the middle, roll it up to create a larger rose. The size of the flower can vary depending on personal preference.
If making 3 layers, the inner layer is a small bud, and the outer layer gradually becomes larger to create a beautiful blooming flower.
Arrange the flowers on a plate, garnish with coriander to create a rose garden.
Note:
If desired, you can make a dipping sauce with the following recipe: 20g vinegar, 8g minced garlic, 5g soy sauce, 20g boiling water, a pinch of salt, a few drops of sesame oil, stir well, and add chili sauce if you like it spicy.
