Ingredients
– 25-30 quail eggs
– 1/2 small beet
– Seasonings: Salt, lemon juice or vinegar, star anise, sugar.
Instructions
– Gently wash the quail eggs, place them in a pot, pour in enough water to cover them, wait for the water to boil, then reduce the heat to low to prevent the eggs from cracking. Add a slice of lemon to the pot so that the eggs are easy to peel after boiling. From the boiling point, boil the eggs for another 5 minutes until cooked.
– Transfer the eggs to a bowl of cold water, let them cool completely, then remove and drain.
– Peel the eggs.
– Peel the beet, slice it thinly, add a little water, then grind it to a puree and strain the juice. You can replace the beet with purple cabbage, purple avocado leaves…
– Make the marinating liquid: Pour the beet juice, add about 100ml of filtered water, 30ml of vinegar (you can replace the vinegar with lemon juice, but you have to wait for the mixture to cool slightly before squeezing the lemon in), 2 tablespoons of sugar, 1 teaspoon of salt, 1-2 star anise, simmer over low heat, then turn off the heat. Wait for the marinating liquid to be slightly warm before use.
– Arrange the eggs in a container, pour all the marinating liquid over them, marinate overnight. The next day, the eggs will be beautifully dyed with beet color. Remove the eggs and rinse them with boiling water to remove any remaining beet or purple cabbage color on the eggs.
– Drain the eggs, cut a thin slice on the side of each egg to keep them stable and prevent them from rolling.
– Decorate the grape stem with climbing plants like bitter melon, chayote, or other climbing plant flowers.
