Frequently asked questions

First, prepare a brine solution by dissolving salt and sugar in cold water. Soak the chicken in this brine for 2-4 hours. Then, remove the chicken from the brine and pat it dry. Fill a pot with cold water and gently lower the chicken into it. Bring the water to a gentle boil over medium heat, then immediately turn off the heat and cover the pot. Let the chicken sit in the hot water for 15-20 minutes. Finally, remove the chicken from the pot and submerge it in an ice water bath for a few minutes before serving.

Brining the chicken helps to keep the meat juicy and tender during cooking. It also adds flavor and helps the chicken to absorb the brine solution, resulting in a more flavorful dish.

Using cold water to cook the chicken ensures that the meat cooks gently and evenly, preventing overcooking and resulting in a tender and intact final product.

Bring the water to a gentle boil and then immediately turn off the heat. Do not boil the chicken continuously as this can make the meat tough and dry. Instead, let the chicken sit in the hot water for 15-20 minutes, which is sufficient time to cook it through while maintaining moisture and tenderness.

The ice water bath helps to stop the cooking process immediately, ensuring that the chicken doesn’t overcook and maintaining the tenderness and integrity of the meat.
