To choose a delicious piece of pork that is sweet and not smelly after boiled, you need to carefully choose the ingredients. You should buy pork from reputable sources with clear origins.
Choose pieces of pork that are fresh pink in color. Press the meat with your hand, if it has good elasticity and is not sticky, it is good. The meat should not have a foul odor.
Tips to boil delicious pork
Wash the meat thoroughly and remove the hair from the skin. Do not cut the meat into small pieces before boiling because it will lose its sweet taste.
To make the meat look attractive, you can use a string to tie the meat into a round shape before boiling. This method is suitable for pork trotters. For pork belly, you can leave the piece whole without using a string.
Put the meat into a pot of boiling water. Make sure the meat is fully submerged in water to prevent it from turning black after boiling.
To make the boiled meat whiter, you can add a little vinegar and salt to the water. Let the water boil for about 3 minutes, then remove the meat and rinse it with warm water to clean it.
Boil another pot of water, add a whole onion or a piece of crushed ginger (you can use scallion or onion as a substitute) and a teaspoon of salt. Boil the meat until it is cooked. Adding onion or ginger to the pot while boiling the meat will help remove the smell, and the cooked meat will have a more delicious aroma.
Boil the meat on medium heat. If the water boils too vigorously, the meat will not cook evenly on the inside. While boiling, use a spoon to remove the foam to keep the broth clear and the meat from becoming smelly.
The boiling time depends on the size of the meat, usually from 15-30 minutes.
To check if the meat is cooked, you can use a fork to poke it. If you see pink liquid coming out, continue boiling for another 5-10 minutes. If the meat is cooked, the fork should easily penetrate through.
After the meat is cooked, remove it from the pot and place it in a bowl of cold water (you can add ice to cool the boiling water). The water should be enough to submerge the meat. Wait until the meat is completely cooled, then take it out, drain the water, and slice the meat.
With this method, the boiled meat will be white and beautiful, and the sliced meat will not have a foul smell and taste.
You can eat the boiled pork with salt and lime, chili sauce, shrimp paste… according to your preference.
