Use bread flour and lime
For a normal pig stomach, you need to use about 4 tablespoons of bread flour and about 70 – 80g of fresh lime.

First, you use your hands to turn the inner part of the stomach out, revealing the yellow mucus. Add bread flour and thinly sliced lime, rub to evenly cover the mucus, squeeze firmly so that the lime can help eliminate the smell. Then, you will see the bread flour sticking tightly to the mucus. You just need to gently push the flour with your hands, pulling all the mucus out of the stomach.
After removing all the slime and flour, rinse it again with water and a little salt. The smell of the stomach will be gone.
Use vinegar and salt
Salt and vinegar are very effective ingredients for cleaning and removing odor. First, turn the inside of the stomach out, then add 3 tablespoons of salt and 1/2 cup of vinegar (you can use rice vinegar, apple vinegar or cane vinegar).
Use your hands to quickly rub so that the salt adheres to the mucus of the stomach. After about 3 minutes, you will see the mucus slowly flowing away when you rub it.
Finally, rinse the stomach several times with water.

Boil water in a pot, add a little salt and a few slices of fresh ginger, turn on the heat and bring the water to a boil, then quickly blanch the stomach. After removing it, use a knife to gently scrape off the coagulated mucus and then rinse it again with clean water.
Use fish sauce
Squeezing the stomach with fish sauce can also help you remove the smell as well as the viscosity on the pig stomach. With this method, you will save time and achieve high cleaning effectiveness, especially when eating, you will feel very fragrant.
Note that you should use concentrated fish sauce because it has a high saltiness, which will make the cleaning process more effective. Because the smell of fish sauce is very strong, during the process of squeezing the stomach with fish sauce, you should wear gloves and handle it gently to avoid splashing on your clothes.
How to boil pig stomach to be white and crispy
After applying the useful tips above to get rid of the smell of stomach, you boil water in a pot, wait for it to boil and then put the stomach in and quickly blanch it for about 1-2 minutes, then remove it, you will see that the stomach is very white.
Then, use a knife to scrape off the fat sticking to the stomach, scrape it clean on the outside and rinse it again with clean water.
Boil water in a pot, wait for the water to warm up then squeeze the juice of half a lime into it, add lemongrass, ginger, and then put the stomach in to boil. In the first 5 minutes after boiling, open the lid to reduce the smell of the stomach, then cover again and simmer for about 15-20 minutes.
While waiting for the stomach to be boiled, prepare a clean bowl of filtered water, add ice and squeeze the remaining juice of half a lime into the bowl.
When the stomach is cooked, remove it and soak it immediately in the cold water bowl for about 15 minutes, or until ready to eat.
