Most people soak the wood ear mushrooms in hot water to make them expand, then rinse them with cold water to finish. However, chefs believe that this method is not correct and wood ear mushrooms cannot be completely cleaned.

1. Using warm water + baking soda
Since hot water will cause the loss of nutrients in wood ear mushrooms, we should only soak them in warm water with baking soda. Warm water and baking soda effectively clean dirt and impurities on the surface of wood ear mushrooms. Moreover, the combination of warm water and baking soda also helps to reduce the soaking time of wood ear mushrooms.
2. Using warm water + salt
Put the wood ear mushrooms in a bowl, then add an appropriate amount of warm water and 1 teaspoon of salt, cover the bowl and shake it gently, then soak the mushrooms for 5 minutes and rinse them 1-2 times. Salt helps to remove impurities and disinfect, making wood ear mushrooms clean and good for health.
3. Using warm water + flour + sugar
Put the mushrooms in a pot, add an appropriate amount of warm water, then add 1 tablespoon of flour and 1 teaspoon of white sugar. Stir well, then soak the wood ear mushrooms for 5-10 minutes and rinse them again.
We all know that flour has strong absorption abilities, it will absorb the dirt on the surface of the wood ear mushrooms. Combining flour and sugar increases the effectiveness of cleaning.
So, don’t soak wood ear mushrooms in hot water too quickly, as they are not completely clean and also lose nutrients and flavor. Just use warm water with a little salt or flour + sugar or baking soda to achieve perfect results.
