The dish boiled chicken is a familiar meal often seen in Vietnamese families, especially during special occasions and Tet holidays, where almost every table has a boiled chicken dish. However, eating too much boiled chicken can become boring and the meat can become bland. Below is a recipe for boiling chicken without water, which helps the chicken to be flavorful and juicy.

Boiled chicken with salted egg

The chicken can be left whole, split in half, or cut into pieces as desired. Clean the chicken thoroughly and let it dry, no need to season it. Before putting the chicken in the pot, spread a layer of salted egg at the bottom of the pot to prevent the chicken skin from sticking to the bottom and the heat from the salt will make the chicken very fragrant when cooked. You can also use an electric rice cooker, but it needs to be tightly covered to retain heat and steam to cook the chicken.

Put the chicken in the pot, cover it tightly and simmer it over low heat for about 40 – 50 minutes or until the chicken is cooked. During the steaming process, do not open the pot frequently, only open it when you smell the fragrance.


 

Boiled chicken with lemongrass and lime leaves

Method: First, the chicken is already cleaned and left whole. Crush some salt, a little MSG, and hot green chili. Rub the salt and chili all over the chicken.

Then, use a pot with a thick bottom, line the bottom with a layer of rock salt, then add crushed lemongrass and lime leaves, and finally put the chicken on top, and cover with another layer of lime leaves. Steam for about 60 minutes, it is advisable to use a pot with a transparent glass cover for easy observation of the chicken. During the first 30 minutes of steaming, only open the pot occasionally to check, as frequent opening of the pot will release heat and prolong the cooking time of the chicken.

Tips for choosing fresh and delicious pre-slaughtered chicken

Look at the color of the chicken meat: The color is quite important in “evaluating” the freshness of the chicken. If the skin looks shiny, naturally pink, or has a thin layer of light yellow fat, and the legs and back are slightly golden, then it is definitely a good chicken. Note that do not choose chickens that are white or dark in color, or even abnormalities on the body, as these are signs of diseased chickens.

Smell the odor of the chicken meat: When buying chicken, you should check the distinctive aroma of the chicken. If a chicken has a foul smell, a gamey smell, or a scent of antibiotics, then it is certainly a chicken that has been slaughtered for a long time. Be careful when choosing chickens that have no smell, the surface of the skin is not purple or bruised, it will be a good chicken for preparing nutritious meals for the family.

Check the resilience of the chicken: One of the ways to choose good pre-slaughtered chicken is that you use your hand to gently press to check the resilience of the chicken. If the meat is soft, it may have been subjected to weight gain drugs. Another small tip to see if the chicken has been injected with water is to press your hand on the chest or abdomen of the chicken or flip the wing to check under the armpit, if there are small red dots, it means the chicken has been pumped with water.
