The selected squid must be large, thick, white, and firm, with a brown membrane covering the entire body. Especially, the head of the squid must be firmly attached to the body to ensure that it is fresh and not spoiled or smelly.

– 500g fresh squid (tube squid or leaf squid)

– 1 green bell pepper, 1 red bell pepper

– 3 tomatoes

– Dried shallots, minced dried garlic, minced ginger

– Spring onions

– Cooking oil, seasoning powder, salt, white wine, sesame oil, oyster sauce, sugar

Step 1: Clean the squid and other ingredients

– Gently wash the squid in a bowl of water, then grasp the tentacles tightly, pull them gently out of the body.

– Use your hands to remove the slimy layer so that the squid is white and it is easier to pull out the tentacles without slipping or breaking. When the tentacles are pulled out along with the ink sac and digestive system, remove these two parts to make the squid more delicious and white.

– After cleaning the squid, marinate it with sugar for 3 minutes, then rinse it to remove any fishy smell.

– Soak the squid in diluted saltwater for 5 minutes to make it crispy when stir-fried. Alternatively, blanch the squid in boiling water and immediately transfer it to a bowl of ice water. This will also make the squid crispy when stir-fried.

Note: Soak the whole squid to retain its natural sweetness.

– Put the sliced squid in a large bowl, add seasoning powder, salt, sesame oil, oyster sauce, minced garlic, and minced ginger. Mix well and marinate for about 15 – 20 minutes.

Step 3: Stir-fry the squid

– Sauté the dried shallots and minced garlic until fragrant, then add the squid and quickly stir-fry until it becomes firm. Transfer the squid to a separate plate.

– Sauté the shallots and minced garlic, then add the bell peppers and tomatoes and stir-fry until they are almost cooked. Add the squid and stir-fry over high heat. Season with spices according to your taste. Stir-fry for about 3 – 5 minutes until the squid and vegetables are cooked. Add the spring onions and ground pepper, stir well, and turn off the heat.
