1 Prepare the Ingredients
The main ingredient for this dish is pork belly, or you can use pork shoulder, or any other cut of pork that has a good amount of fat and lean meat.
When selecting the pork, choose a piece with a nice layer of fat and lean meat, with no bones. The ideal cut is from the belly, shoulder, or butt. However, the best cut for this dish is the belly, with alternating layers of fat and lean meat, not too thick.
Once you have your pork, rinse it thoroughly and remove any remaining hair from the skin. Using a sharp knife, score the skin of the pork horizontally, making cuts about 2.5 cm apart. Be careful not to cut into the meat, only the skin, as this will help render the fat and create a crispy crust.
2 Tips for a Successful Roast Pork
Preheat your oven to 232 degrees Celsius for about 10 minutes to ensure even cooking. This will help the pork cook evenly and faster.
Before placing the pork in the oven, pat it dry and place it in a roasting pan, skin-side up. Choose a pan with deep sides to catch the rendered fat, and a flat bottom to prevent the pork from shifting during roasting.
Brush the pork all over with oil, paying extra attention to the scored skin and the crevices. Once the oil is applied, sprinkle salt, pepper, and garlic powder generously over the pork and rub it in with your hands to ensure an even coating.
Place the pan in the middle of the preheated oven and roast for 45-50 minutes. After this time, if the skin is golden and crispy, lower the temperature to 191 degrees Celsius and roast for an additional 60 minutes to ensure the meat is cooked through.
Once the time is up, remove the pork from the oven and cut a small piece to check if it’s cooked to your liking. If it’s still a bit pink, return it to the oven for another 5-10 minutes, then turn off the heat and let the pork rest for a few minutes before slicing and serving.
If, after lowering the temperature and roasting for about an hour, the skin is not crispy, return the pork to the oven and roast at 232 degrees Celsius for 10-20 minutes to crisp up the skin.
