 – 500g of large shrimp

– 4 cloves of garlic

– 2 bird’s eye chilies

– 1 horn pepper

– 1 shallot

Served with: Vietnamese coriander, cucumber

Spices: Salt, fish sauce, sugar, seasoning powder, chili powder, rice wine

How to Make Delicious Grilled Shrimp with Salt and Chili

Step 1: Prepare the Shrimp

Clean and devein the large shrimp. There are several ways to remove the shrimp vein: cut a small slit along the back and use a toothpick to remove it, cut the tip of the shrimp at an angle and push out the black vein, or simply use your fingers to pull it out. Rinse the shrimp in diluted salt water and then clean water. Finally, marinate the shrimp with a little rice wine, which helps to remove the fishy smell and enhances the sweetness and redness of the shrimp when grilled.

Step 2: Make the Salt and Chili Sauce

Finely chop the shallot, garlic, bird’s eye chilies, and horn pepper (with the seeds removed). To add extra fragrance to the sauce, you can include some washed coriander roots. Heat a pan with a little cooking oil and sauté the chopped ingredients. Season with 2 teaspoons of fish sauce, 1/2 teaspoon each of sugar and salt, 1/2 teaspoon of seasoning powder, 1/2 tablespoon of chili paste, 2 tablespoons each of annatto oil and water. Bring the mixture to a boil until it thickens, then add the coriander roots for extra aroma. Turn off the heat and blend the mixture until smooth.

Step 3: Prepare the Bamboo Skewers

Soak the bamboo skewers in water for about 10 minutes to prevent them from burning during grilling. Thread the shrimp onto the skewers from tail to head. Brush the salt and chili sauce evenly over the shrimp and let them marinate for 6-8 minutes to absorb the flavors.

Step 4: Grill the Shrimp

You can grill the shrimp over charcoal, in an oven, or using an air fryer. When one side of the shrimp turns reddish and the shell becomes slightly charred and crispy, flip them over to grill the other side. Transfer the grilled shrimp to a plate and garnish with Vietnamese coriander and cucumber. It’s now ready to be enjoyed!

Step 5: Enjoy the Delicious Grilled Shrimp

The grilled shrimp should have a beautiful reddish color and a mouthwatering aroma. The combination of sweet, salty, and spicy flavors is simply irresistible. This dish is perfect as a snack or appetizer and can also be served with white rice for a more filling meal.
