Fried tofu is a simple and rustic dish that is loved by many people, especially on cool days. Enjoying the crispy and golden fried tofu dipped in sweet and sour fish sauce is a delightful experience.
However, sometimes frying tofu can be challenging for many women, such as tofu breaking apart, sticking to the pan, being burned on the outside but still uncooked inside… Therefore, to make it easier to fry tofu, you can refer to the following simple tips.
Use a clean frying pan
If you use a regular pan instead of a non-stick pan to fry tofu, you need to scrub it clean before frying. Note that you should not use an iron scrubber as it can scratch the pan, making the tofu more likely to stick. Just pour hot water into the pan, the old food will soften and come off gradually, then rinse it clean.
Drain the tofu or put it in the freezer before frying
Before frying tofu, you can first drain the water from it. Or you can use a kitchen towel or paper towel to absorb the water from the tofu. Frying wet tofu will not only splatter the oil but also make it stick more to the pan.
Alternatively, before frying, you can put the whole tofu in the freezer for 30 minutes, then take it out and cut it into small pieces. This tip will make the tofu crispy, the pieces of tofu will be neat and beautiful, and they will not break apart in the pan.
Prevent sticking when frying
Add a little vinegar, spread it evenly on the surface of the pan after the pan is hot, then add oil, wait until the oil is hot before adding the tofu, the tofu will not stick to the pan.
In addition, you can prevent the tofu from sticking to the pan by frying an egg first after the oil is hot, then fry the tofu. This way, the tofu will not stick together.
Frying tofu
When starting to fry tofu, you need to ensure that the cooking oil is hot enough. Since it is not a non-stick pan, you can heat the pan first and then add the oil, wait for a while and then add the tofu, the tofu will turn golden and crispy and will not stick to the pan.
Note:
The amount of oil should cover at least 1/4-1/3 of the tofu and you should not wait until the oil is smoking hot as it will quickly burn the tofu.
Do not let the tofu pieces stick together as it will be harder to separate them. Also, since the cooking oil is already hot, you should only fry the tofu over medium heat to prevent it from burning.
To ensure that the temperature of the oil in the pan is always even, you should only fry a moderate amount of tofu, do not put too much tofu in the pan as it will reduce the heat of the oil and the tofu will not cook evenly.
If unfortunately, the tofu sticks to the pan while frying, you should not rush to remove it, as it can break the tofu. You can turn off the heat, tilt the pan to one side, wait for the pan to cool down, and the tofu will come off on its own, making it much easier to remove.
