When the stem is left attached (and the core is intact), the juices inside can escape and evaporate quickly. This, in turn, allows the tomato to quickly become deflated and wrinkled. López-Alt also suggests storing your tomatoes on a flat surface so that they can hold their juices and remain plump for as long as possible.

Method 1: Canning
Select ripe but firm, unblemished tomatoes, and wash them thoroughly. Steam until soft.
Once the tomatoes are soft, remove them from heat and let them cool. Puree in a blender or food processor and strain out the seeds.
In a large pot on the stovetop, heat the tomato puree. Add 1 teaspoon of salt per quart of puree and heat until thickened.
Method 2: Fresh-packing
No matter the method, choosing the right tomatoes is of utmost importance. Select ripe but firm tomatoes that are unblemished and a vibrant red color. Wash them and allow them to dry thoroughly.
Layer the tomatoes in a large jar or crock, sprinkling a layer of pickling or canning salt between each layer.
