Crispy roasted pork is the most appealing dish, especially when the weather is cool and nice. It is also a dish that men like to enjoy with drinks, and children love it. Crispy roasted pork can be eaten with bread, dipped in fish sauce, or eaten with rice vermicelli, all are delicious. Making homemade roasted pork ensures hygiene because you know exactly what kind of meat you choose. Meanwhile, when buying roasted pork outside the market, it is difficult to know whether the meat has been stored for a long time and whether it is safe to eat.
You can make it with a pan without an oven or a deep fryer. So every family can make this dish. We will guide you to make it with all three tools.
Prepare the ingredients
Pork belly. You should choose dry, evenly colored, and evenly textured meat. Meat with a balanced ratio of fat and lean will taste better, not dry, and the texture of the meat will be firm and not fall apart. The amount of meat depends on the family. This recipe is for 2kg of pork belly.
1 clove of garlic
1 tablespoon of oyster sauce
Cooking wine: if not available, use white wine as a temporary substitute
Soybean sauce 1 tablespoon
Five-spice powder: ½ packet
Sugar, seasoning powder, salt
Prepare and marinate
Wash the pork belly with salt water, you can rub salt for 15 minutes to remove the porky smell.
Boil water in a pot and add a tablespoon of vinegar. Put the meat in to blanch for about 5 minutes. Take the meat out and rinse it with cold water, then drain.
Trim the meat if the piece is thick.
Marinate the meat: Finely chop the garlic, mix with five-spice powder, oyster sauce, soy sauce, 1 tablespoon of sugar, seasoning powder, and 1 tablespoon of wine. Wear gloves and mix the mixture evenly with the meat to marinate, but do not rub it on the skin. Put the meat in a wrapped bowl, cover it with plastic wrap, and refrigerate for 3 hours.
Preparing the skin for crispiness: This is the most important step in making crispy roasted pork. Mix 2 tablespoons of vinegar and 1 tablespoon of salt evenly. Use a fork or a sharp tool to prick holes in the pork skin. Then brush this mixture onto the skin to help make it crispy when roasted.
Roasting or frying to make the meat crispy
Method 1: using an oven: Preheat the oven to about 250 degrees for 5 minutes to warm it up. Then place the meat on the baking tray at 200 degrees Celsius. Remember to adjust the roasting mode to the side with the skin. Check after about 20 minutes.
Method 2: frying with a pan: Heat a dry pan. Add cooking oil to the pan and sprinkle a spoonful of flour (can be cornstarch, tapioca starch, or wheat flour…) to prevent splashing and make the pork skin crispier. When the oil is hot, place the meat in and fry, remember to press the skin down onto the bottom of the pan first. Fry for about 10 minutes until the skin is crispy, then flip it over and fry until cooked.
Method 3: using an air fryer: Wrap the piece of meat with foil, leaving the skin exposed. Heat the air fryer, put the meat in, and brush it with a little cooking oil. Let it air fry for about 30 minutes until the skin is crispy. Then remove the foil and air fry for another 15 minutes until the skin is crispy and the meat turns golden.
