Ingredients

– Spinach: 1 bunch

– Chicken breast: 300g

– Garlic: half a bulb

– Red chili pepper: half a fruit

– Salt, pepper, cooking wine, dark soy sauce, cornstarch, vegetable oil.

Instructions

– Rinse and thinly slice the chicken breast. Put the chicken breast in a bowl, add some salt, pepper, 1 tablespoon of cooking wine, and 1 tablespoon of dark soy sauce. Mix well to marinate the chicken. Transfer the chicken to a small bowl, add some cornstarch – enough to coat a thin layer on the surface of the chicken. Finally, add some vegetable oil, mix well, and marinate for 10 minutes.

– Rinse the spinach and cut into bite-sized pieces. Set aside the young leaves on top. Slice the red chili pepper into thin strips, peel and thinly slice the garlic, and arrange them on a plate for later use.

– Add some vegetable oil to a pan, heat it up, then add the marinated chicken. Stir-fry quickly with chopsticks, add some chili pepper, and stir-fry until the chicken is cooked. Transfer the chicken to a plate, leaving the remaining oil in the pan.

– Add the sliced chili pepper to the pan, fry until fragrant, then add the stem and lettuce leaves. Stir-fry quickly over high heat for a few seconds, then add the young leaves on top.

– Add a sufficient amount of hoisin sauce, soy sauce, and ground pepper. Continue stir-frying over high heat until the vegetables are cooked. You don’t need to add more salt as the soy sauce is already salty.

– Finally, add the chicken, stir well, and turn off the heat.
