Nem thính is a popular dish in Vietnam because it has a fragrant and non-greasy aroma. Vegetarian nem thính is also good for people who are on a diet or vegetarian. Mushrooms are a very good food for health because they have a high vegetable protein content. On rainy days, making nem thính is very delicious or adding it to your vegetarian menu is also very attractive.

Ingredients:

Seafood mushrooms (or kim châm mushrooms) 1 pack

Ready-made or homemade thính: 3 tablespoons

1 chili pepper

5 lime leaves

Ginger, salt for marinating mushrooms

How to choose and handle mushrooms

When buying mushrooms, you should observe not to take crushed or discolored mushroom bags. Good mushrooms have white stems and no crushed or greasy sections. Mushrooms with no strange black odor are fresh mushrooms.

To eliminate the unpleasant smell of mushrooms, you do as follows: After cutting off the mushroom roots, you wash them with clean water and then soak the mushrooms in ginger salt water. Dissolve 1 liter of water with a teaspoon of salt and a few slices of ginger. Soak for about 15 minutes, then remove the mushrooms and rinse them again, then squeeze out the water.

Processing mushrooms

Heat a tablespoon of vegetable oil. Then stir-fry the mushrooms. Season with a little seasoning, do not add sugar at this step, because sugar will burn the bottom of the pan, making the mushrooms discolored. Stir-fry the mushrooms until they are cooked. If the mushroom threads are large, you can tear them apart.

Mixing nem

After reducing the heat, put the mushrooms in a bowl, add a teaspoon of sugar to increase sweetness if desired. Wear cooking gloves, then squeeze the mushrooms and thính together with your hands. If the nem is wet, add some thính powder. Then sprinkle the sliced ​​chili and sliced ​​lime leaves on top, and arrange them on a plate.

This nem thính dish is even more delicious when rolled with sung leaves or guava leaves and dipped in fish sauce.

Nem dipping sauce: If you are not a pure vegetarian and still use salty fish sauce, use salty fish sauce to dilute it. But if you are a vegetarian, use vegetarian fish sauce. The recipe for nem dipping sauce consists of 2 tablespoons of fish sauce, 1 tablespoon of sugar, 1 tablespoon of lime juice, 1 tablespoon of water (the amount of fish sauce varies depending on the type of fish sauce, so you can adjust the amount). Mix the mixture evenly to dissolve the sugar. If you eat garlic and chili, chop garlic and chili and add them after the fish sauce has been mixed. If you are a vegetarian and don’t eat pungent flavors, do not use garlic.
