You can add a little baking powder to beat with the eggs. This ingredient will make the fried eggs fluffy, puffier than normal fried eggs. For 2 eggs, you only need 1/4 teaspoon of baking powder. Note that you should wait for the oil to heat up before pouring the eggs in and fry them over medium to high heat for the eggs to puff up.
After adding baking powder, you need to fry the eggs immediately.
Butter

Cornstarch

White wine
To remove the fishy smell of the eggs, you can use white wine or cooking wine. Just add about 1/3 teaspoon of wine to beat with the eggs and spices, then fry them. The wine helps eliminate the fishy smell and make the eggs have an attractive fragrance.
Vegetable oil
To prevent the fried eggs from drying out and remain moist and smooth even if left for a long time, you can beat the eggs with a little vegetable oil.
