How to choose fresh milk for making mozzarella cheese
– The best type of milk for making mozzarella cheese is fresh, unpasteurized milk that has not been processed. Unpasteurized milk contains specialized bacteria that can produce lactic acid, which turns lactose (the sugar in milk) into lactic acid and causes it to solidify. This solidified part is casein, a type of protein in milk that becomes mozzarella cheese.
– You can buy unpasteurized milk (raw milk) from dairy farms. If not available, you can use fresh milk from the supermarket or grocery store. However, the protein composition in processed fresh milk is not stable and can easily denature at high temperatures, resulting in a less aromatic cheese compared to fresh milk from dairy cows.
2 How to make Mozzarella Cheese
Step 1 Prepare and Cook the Curd
First, pour 2 liters of unpasteurized milk into a pot and heat it on a stove to 50 degrees Celsius. While stirring gently, add 4 to 5 tablespoons of vinegar or lemon juice.
Continue heating and stirring until you see the curds forming. Use a flat spoon to gather them into a solid mass. At this point, the milk will turn yellow, and this is the curdled milk mixture.
Step 2 Knead the Cheese to Remove the Whey
After collecting the curds into a solid mass, you have the mozzarella cheese. Use a flat spoon to remove the cheese from the curdled milk mixture. Knead and squeeze the cheese to remove the whey, then place it in a dry bowl.
Step 3 Finalizing
Place the curdled milk mixture back on the stove and heat it until you see steam rising. Add 0.5 teaspoon of salt to give it a slightly salty taste and enhance the aroma of the milk in the cheese. Stir the mixture well.
Next, place the mozzarella cheese back into the pot to soak in the saltwater for a few minutes, then turn off the stove. Stir the mixture with a flat spoon and remove the mozzarella cheese. Stretch and knead the cheese for a few minutes, preferably wearing gloves as the cheese will be hot.
Continue kneading and squeezing the cheese until it becomes smooth, shiny, and elastic. Then, soak it in ice water for 2 minutes. After 2 minutes, remove the cheese, and it’s done.
3 Finished Product
Enjoy the smooth, creamy, and stretchy mozzarella cheese. When you taste it, you will experience the salty and creamy flavor of fresh milk. You can melt it or use it directly in various dishes according to your preference.
