A common mistake is to place shrimp directly in the refrigerator, which not only diminishes the meat’s quality but also causes it to lose its sweetness and chewiness. So, what is the most effective way to store shrimp?
Preserving Shrimp Using the “Sugar Coat, Seal, and Freeze” Method
A simple and effective way to preserve shrimp is to “coat it with sugar, seal it tightly, and freeze it. Even after six months, the shrimp will remain fresh and tasty.”
Step 1: Prepare the Shrimp
Thoroughly rinse the shrimp under cold running water to remove any impurities. Depending on your preference, you may leave the heads and shells on or peel them off.
Step 2: Coat the Shrimp with Sugar
Sprinkle a thin layer of granulated sugar over the shrimp. Sugar has hygroscopic properties, which help retain moisture during freezing and prevent ice crystal formation. Use just enough sugar to avoid altering the shrimp’s flavor, ensuring an even coating across the entire surface.
Step 3: Store the Shrimp
Place the shrimp in a ziplock bag that is appropriately sized for the quantity of shrimp to minimize air exposure. Remove as much air as possible to inhibit bacterial growth and maintain freshness. Store the bag in the freezer at a temperature below -18°C, which is the ideal temperature for long-term shrimp preservation while maintaining its flavor and nutritional value.
This method not only prolongs the freshness of the shrimp but also retains moisture, especially preventing the heads from turning black. Additionally, when thawed, the shrimp will remain as fresh as if it were just caught. Another simple method is to trim the shrimp’s whiskers, place them in a sealed bottle of mineral water, and freeze.
