Step 1 Prepare the Ingredients
Wash and soak the fruits and vegetables in warm water, then set them aside to dry. Finely chop or mince the garlic and shallots, and cut the chili peppers into small pieces.
Clean the chicken thoroughly, plucking any remaining feathers. Blanch the giblets in boiling water, then set them aside to cool.

Rub the marinade all over the outside of the chicken. Once the exterior is coated, stuff half of the prepared fruits and vegetables into the cavity of the chicken.

Heat a pot over medium heat and add 50ml of cooking oil. Once the oil is hot, add the minced garlic and shallots, frying until fragrant and golden. Place the chicken in the pot and stir until the meat is browned. Then, pour in the coconut water and 500ml of filtered water. Simmer the chicken for 20-30 minutes until it is cooked through.
